No-Bake Chocolate Peanut Butter Crunch Bars are an easy, rich, and satisfying dessert that combines creamy peanut butter with crispy texture and a smooth chocolate topping. They require no oven, set in the fridge, and are perfect for quick desserts, snacks, or make-ahead treats.

Ingredients

For the base layer:

  • 2 cups crispy rice cereal
  • 1 cup rolled oats (optional but adds chewiness)
  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the chocolate topping:

  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons peanut butter
  • 1 tablespoon coconut oil or unsalted butter

Instructions

  1. Prepare the pan
    Line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
  2. Make the peanut butter mixture
    In a medium saucepan over low heat, combine peanut butter, honey (or maple syrup), and butter. Stir continuously until the mixture is smooth and fully melted. Remove from heat and stir in vanilla extract and salt.
  3. Combine dry ingredients
    In a large mixing bowl, add crispy rice cereal and oats (if using). Pour the warm peanut butter mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
  4. Press into pan
    Transfer the mixture into the prepared pan. Press it down firmly using a spatula or the back of a spoon to create an even, compact layer. This helps the bars hold together after setting.
  5. Prepare chocolate topping
    In a microwave-safe bowl or using a double boiler, melt chocolate chips with peanut butter and coconut oil. Stir every 20–30 seconds if microwaving until smooth and glossy.
  6. Add chocolate layer
    Pour the melted chocolate mixture over the peanut butter base. Spread evenly with a spatula.
  7. Chill
    Place the pan in the refrigerator for at least 2–3 hours, or until fully set and firm.
  8. Slice and serve
    Once set, lift the bars out using the parchment paper overhang. Cut into squares or rectangles using a sharp knife.

Storage

Store in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months; thaw in the fridge before serving.
