Ingredients

  • 40 Ritz crackers

  • 2 large eggs
  • 2 tablespoons milk
  • 1 cup breadcrumbs or crushed crackers
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Cooking spray or olive oil spray

Instructions

  1. Prepare the filling
    Cut cheese slices into small squares that fit neatly on the crackers. If using deli meat, cut into matching sizes.
  2. Assemble the sandwiches
    Place cheese and optional turkey or ham between two Ritz crackers to form small sandwiches. Press gently to keep them together.
  3. Prepare coating stations
    In one bowl, whisk eggs and milk together.
    In another bowl, combine breadcrumbs, garlic powder, onion powder, and paprika.
  4. Coat the sandwiches
    Dip each cracker sandwich into the egg mixture, allowing excess to drip off. Then coat evenly in the breadcrumb mixture. Press lightly so the coating sticks well.
  5. Preheat air fryer
    Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  6. Air fry
    Lightly spray the air fryer basket with cooking spray. Arrange cracker sandwiches in a single layer without overcrowding. Spray the tops lightly with oil.
  7. Cook
    Air fry for 5 to 7 minutes, flipping halfway through, until crispy and golden brown. The cheese inside should be melted and gooey.

    Allow them to cool for 2 minutes before serving because the filling will be hot.
