No-Bake Cheesecake Balls

No-Bake Cheesecake Balls are creamy, rich, bite-sized treats with the flavor of classic cheesecake in an easy no-bake form. They are perfect for parties, holidays, dessert platters, or quick sweet snacks and can be customized with different coatings and toppings.

Ingredients

  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1 cup white chocolate chips or milk chocolate chips, melted

Optional coatings and toppings:

  • Crushed graham crackers
  • Sprinkles
  • Crushed cookies
  • Chopped nuts
  • Shredded coconut
  • Cocoa powder
  • Mini chocolate chips

Instructions

  1. Prepare the cheesecake mixture
In a large mixing bowl, beat softened cream cheese and butter together until smooth and creamy.
  2. Add sweetness and flavor
Mix in powdered sugar and vanilla extract until fully combined.
  3. Add graham cracker crumbs
Stir in graham cracker crumbs until a thick dough-like mixture forms. The mixture should be soft but firm enough to roll.
  4. Chill the mixture
Cover the bowl and refrigerate for 30 to 45 minutes to make rolling easier.
  5. Shape into balls
Using a spoon or small cookie scoop, portion the mixture and roll into bite-sized balls. Place them on a parchment-lined tray.
  6. Freeze briefly
Freeze the cheesecake balls for about 15 to 20 minutes so they hold their shape during coating.
  7. Melt the chocolate
In a microwave-safe bowl or double boiler, melt the chocolate until smooth. Stir frequently to prevent burning.
  8. Coat the cheesecake balls
Dip each chilled cheesecake ball into melted chocolate using a fork or dipping tool. Allow excess chocolate to drip off.
  9. Add toppings
Before the coating sets, sprinkle with crushed graham crackers, nuts, sprinkles, coconut, or mini chocolate chips if desired.
  10. Chill until firm
Place coated cheesecake balls back onto the parchment-lined tray and refrigerate until the chocolate hardens completely.

Serving Suggestions

Serve chilled as mini desserts or party treats. They pair well with coffee, tea, milk, or fruit platters.

Storage

Store in an airtight container in the refrigerator for up to 5 days. They can also be frozen for up to 2 months.

Tips

  • Use full-fat cream cheese for the creamiest texture.
  • Chill thoroughly before dipping to prevent melting.
  • White chocolate gives a sweeter flavor while dark chocolate creates richer contrast.
  • Add lemon zest, peanut butter, or crushed berries for flavor variations.
