Air Fryer Turkish Bread Recipe

This is a soft, fluffy version of traditional Turkish bread made using an air fryer. It has a light texture, slightly chewy crust, and is perfect for serving with curries, grilled meats, dips, or soups.


Ingredients

For the dough

  • 3 cups all-purpose flour (or bread flour for better texture)
  • 2 teaspoons instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (add gradually as needed)
  • 2 tablespoons olive oil (plus extra for greasing)

For topping

  • 1 egg yolk
  • 1 tablespoon milk
  • 1 to 2 tablespoons sesame seeds
  • 1 tablespoon nigella seeds (optional but traditional)
  • A little olive oil for brushing

Instructions

1. Activate the yeast

In a mixing bowl, add warm water, sugar, and yeast. Stir lightly and let it sit for 5 to 10 minutes until it becomes foamy on top. This shows the yeast is active.


2. Prepare the dough

Add flour and salt to the yeast mixture. Pour in olive oil. Mix everything together until a rough dough forms.

Transfer the dough to a clean surface and knead it for 8 to 10 minutes until it becomes smooth, soft, and elastic. If the dough is sticky, sprinkle a little flour. If it is too dry, add a small amount of water.


3. First rise

Lightly coat the dough with olive oil and place it in a bowl. Cover it with a cloth or plastic wrap. Let it rest in a warm place for 1 to 1.5 hours or until it doubles in size.


4. Shape the bread

Once risen, punch down the dough gently to release air. Divide it into one or two equal portions depending on the size of your air fryer.

Shape each portion into a round or oval flatbread. Keep the thickness around 1 to 1.5 cm for soft bread.

Place the shaped dough on parchment paper to make it easier to transfer into the air fryer.


5. Second rise

Cover the shaped dough loosely and let it rest for 20 to 30 minutes. This helps make the bread light and fluffy.


6. Add topping

Mix egg yolk with milk and brush it evenly over the surface of the dough. Sprinkle sesame seeds and nigella seeds on top. Lightly brush a small amount of olive oil for extra softness and shine.


7. Air fryer baking

Preheat the air fryer to 180°C for 3 to 5 minutes.

Place the bread (with parchment paper) into the air fryer basket. Cook at 180°C for 8 to 12 minutes depending on thickness and air fryer model.

Check for a golden-brown top and a soft, slightly puffed texture. If needed, cook for an additional 1 to 2 minutes.


8. Rest and serve

Remove the bread and lightly brush with butter or olive oil while still hot to keep it soft. Let it rest for 5 minutes before slicing.
