KETO CREAMY GARLIC CHICKEN

Tender chicken breast smothered in an irresistible creamy garlic sauce. This super yummy creamy chicken recipe paired with your favorite low carb sides makes this the perfect choice!

PREPARATION TIME

Ingredients

3 Tablespoons butter

2 Chicken Breasts- cut into chunks (about 1 pound)

½ teaspoon kosher salt

¼ teaspoon black pepper

1 Tablespoon roasted garlic

½ Cup chicken Broth

1 Cup heavy cream

½ teaspoon xanthan gum

¼ Cup Shredded Parmesan Cheese

Instructions

In a heavy bottom skillet, over medium heat, add you butter. Let melt for a few seconds and then add your chicken breast chunks. Season with salt and pepper. Stir for a few minutes to mix ingredients, then continue cooking for 5 minutes, stirring occasionally. Stir in the roasted garlic and cook for a few minutes more.
Add in your heavy whipping cream and chicken broth. Stir to mix ingredients together and then add in your xanthan gum. Simmer for about 5 minutes to let thicken. Tope with the parmesan cheese, remove from the heat and serve.

Notes

Butter – I usually start off with avocado oil for my recipes but I really like the flavor the butter brings to this dish.  Any oil will work, though.

Chicken Breasts – We are using 2 boneless skinless chicken breasts in this creamy garlic chicken recipe.  I like to cut the pieces into bite size chunks so they cook much more quickly.  This recipe would also be amazing with 1 pound of shrimp!

Roasted Garlic – This recipe calls for roasted garlic and you should be able to find it in a jar in the grocery store or as a paste.  If you can’t find it, you can use regular garlic, or you can roast your own garlic.  I suggest this recipe: Roasted Garlic Recipe.

Xanthan Gum – This may seem like an obscure ingredient, but it is actually quite common. It is used for thickening and emulsifying sauces and is commonly found in store-bought ice cream and sauces. I like to use it because it is less carbs than flour and it’s gluten free. You can skip this if you don’t want to use it and let your creamy garlic sauce simmer for a bit longer to thicken.
