Keto Carmel Cookies

Indulge in a guilt-free sweet treat with these delicious keto salted caramel cookies!

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/4 cup salted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar-free caramel sauce
  • 1/4 tsp sea salt flakes

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. Add in the softened butter, egg, and vanilla extract. Mix until well combined.
  4. Roll the dough into 8 balls and place them on the lined baking sheet.
  5. Use your thumb or the back of a spoon to make an indentation in the center of each cookie ball.
  6. Spoon a dollop of caramel sauce into the indentation of each cookie.
  7. Sprinkle sea salt flakes on top of the caramel sauce.
  8. Bake for 10-12 minutes, or until the edges of the cookies are golden brown.
  9. Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
