Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol
- 1/4 cup salted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup sugar-free caramel sauce
- 1/4 tsp sea salt flakes
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
- Add in the softened butter, egg, and vanilla extract. Mix until well combined.
- Roll the dough into 8 balls and place them on the lined baking sheet.
- Use your thumb or the back of a spoon to make an indentation in the center of each cookie ball.
- Spoon a dollop of caramel sauce into the indentation of each cookie.
- Sprinkle sea salt flakes on top of the caramel sauce.
- Bake for 10-12 minutes, or until the edges of the cookies are golden brown.
- Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
