Air Fryer Lemon Blue Berry Cake

This is such an easy cake to make in the air fryer. The blueberries give this cake a great flavor. I love blueberries in baked goods. I usually add a smear of cream cheese on top and pair it with a hot cup of coffee. This makes an excellent breakfast or dessert.

Ingredients

Lemon Blueberry Bundt Pound Cake:

1/2 cup butterroom temperature

1 1/4 cups granulated sugar

2 large eggs

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla extract

1/2 cup milk

1 tablespoon lemon juice

1 teaspoon lemon zest

1 cup fresh blueberries

Icing:

1 cup powdered sugar

2-3 tablespoons lemon juice

Instructions

In a large mixing bowl, cream the sugar and butter together.
Mix in the eggs.
Add the flour, baking soda, salt, lemon zest, and mix well.
Add the milk and lemon juice.
Fold in the blueberries.
Spray your bundt pan generously with olive oil.
Pour the prepared batter into the prepared pan
Set in the air fryer and set the temperature to 330 degrees F, air fryer setting, for 20-25 minutes.
Check and make sure the cake is fully cooked. The exact time will depend on your air fryer and the pan you use.
When the cake is cooled, drizzle on the icing.
Plate, serve, and enjoy!

Notes

To make the icing: Mix together in a small bowl the powdered sugar and milk. Mix until it’s the consistency of glue, then pour over the slightly cool cake.
